Laban is a fermented yogurt drink, tangy and light, and people here have been reaching for it on hot days for centuries. Rose & Saffron Laban Cooler
Ingredients (serves 2)
- 2 cups cold laban or plain yogurt drink
- 1 tbsp rose water
- Small pinch of saffron, soaked in 2 tbsp warm water
- 1 tsp honey or sugar
- 2 handfuls of ice cubes
- Crushed pistachios or dried rose petals, to garnish
- Optional: tiny pinch of cardamom
METHOD
- Soak the saffron in warm water for at least five minutes. The water should turn a deep, gorgeous gold — that colour is going straight into your glass.
- Add the laban, rose water, saffron water, honey and cardamom to a blender or shaker. Blend until smooth and frothy.
- Pour over ice.
- Finish with pistachios or rose petals. Serve extra cold. Non-negotiable.
